Might as well weigh in with another opinion... I ferment in Glass Carboys. Glass is not permiable to oxygen (plastic is) and is easy to clean and sanitize. Buckets can be good for the first couple of days if you expect a particularly vigourous fermentation, although I just use foam control for...

I use one like this. I take a reading at the start of the boil to determine if I need to adjust my gravity at all. a few drops of wort and you have a near instant reading. Cheers, Corey

I have always been a fan of 1056 for my IPAs. Yeast character should be subdued to showcase the hops - especially for American and IIPA's. Some of the British varieties are good too - just nothing too heavy on yeast characteristics (not sure a Hefe yeast would be good...) Check out here: http:...
