See comments on off-flavours here: http://www.howtobrew.com/section4/cha... Typically astringency is caused by either over-sparging or sparging with water that is too hot. I make sure my [batch] sparge water is below ~80 C, and that I have plenty of grain so I don't need to squeeze out every l...

Your name clearly printed. Since this is not a BJCP judged event we just need to know who made it. Attach to bottle with rubber band so we can easily take it off for anonymity... - Corey

Actually, S-33 is the Belgian Dry ale yeast. S-23 is the lager yeast (I like it too). Here are some others at More Beer. You should probably be fine with that recipe - like you said the munich will add more maltiness and some color (but not alot). Cheers, Corey

I have no specific data regarding Calgary and Chloramine. I must have been thinking of some other report I read (possibly not about Calgary). There are lots of rumors about Calgary switching but currently (I think) they just use Chlorine. Cheers, Corey

I think there is somewhere between 40 and 60 in the club. No idea what percent of the whole in Calgary that would represent. - Corey

I don't use the whole yeast cake, and I may or may not wash the yeast as the mood strikes me. I try to figure out the appropriate amount to pitch (usually a cup or two at most) and use that. Check out the bottom of this article for a good description on why not to use the whole yeast cake: www...

looking for a decent specialty place to pick up some copper and brass plumbin fittings that the big box places (Home despot, Rona, etc.) don't stock. Things like 3/8 copper sweat fittings, brass MFP to Garden Hose, maybe even a little stainless thrown in... Any suggestions? Cheers, Corey
