I want to try a really simple ale (pale-light amber) as my first all-grainer, and was wondering if anyone had any advice about my recipe idea. I'm just winging it with a really simple recipe here.
6 gallon batch
6 lbs Canadian 2-Row
6 lbs Munich (for some colour and more maltiness)
2oz fuggles for 60 min
1oz fuggles for 15 min
1oz fuggles dry hopped in secondary
(I want to get a feel for fuggles).
I'm thinking S33 for yeast because it's what I have, but I'm open to trying something new that the Vineyard would have in stock.

The S33 is a lager yeast. It would make beer but isn't really an ale yeast like you would use for a pale or amber ale. You might want to see if the Vineyard has some Nottingham yeast if you are looking for a dry yeast to use or any one of a number of the liquid yeasts they carry.

Neil at the Vineyeard could probably help you tweak your recipe too. You might want to look into adding some Crystal malt in there and maybe backing off the Munich a little..but thats just a suggestion.

Actually, S-33 is the Belgian Dry ale yeast. S-23 is the lager yeast (I like it too).

You should probably be fine with that recipe - like you said the munich will add more maltiness and some color (but not alot).

You are right Cory. The quick search I did on S33 showed up as a dry lager yeast from Castle Malting.

Thanks for the replies, to fill it out a bit I'll add a lb of crystal medium, I'm thinking that should work well. (Not very experienced!)
