Quick question. Doing my first batch (Coopers Aus. Pale Ale) and I've just syphoned into the secondary but I have a fair amount of head space (the instructions said to leave only 3 inches, I've got most of the neck of the carboy).

I called the place I bought my kit and they said to top it off with water but I also googled it and some forums said to NEVER top it off with water.

Any suggestions? Is there a critical time frame I need to do this in?

I wouldn't add water to top it off.

When you rack to secondary, a lot of CO2 will come out of suspension to blanket the carboy, so I really wouldn't worry aboput it.

Some of us who keg also will shoot a few seconds worth of CO2 into the carboy as added protection.

lightly rock your carboy and it will blow off C02 and push the air out of the carboy.
