I have a batch of IPA in the secondary that is ready to bottle. I am building a kegerator and will have all the gear in place to keg the IPA in two weeks. Any downside of leaving it two week beyond the recipe timeline in the secondary?

Second question: I've got a Oktoberfest Lager in the primary right now. Used a package of Saglager w/34-70 yeast which worked well. I would like to reuse this lager yeast for a Heineken Lager clone (calls for Danish or European Lager yeasts), then again for an Anchor Steam Clone (calls for San Francisco Lager yeast). Thoughts on reusing a successful Lager yeast versus the exact specified yeast?

Hi Doug -- you should have absolutely no problem leaving that beer in the secondary for a few weeks. Just keep the airlock on it and don't let it get too warm (19 degrees or below should be fine). Perhaps in that time you are waiting you could even add some dry hops to really improve the aroma!

Regarding the lager yeast, I don't think the SafLager 34-70 is really appropriate in either a Heiniken clone or a Steam Beer. The latter is a very specific yeast with a distinct fermentation profile and characteristics that is tough to substitute. And a Heineken clone needs a very clean fermenting lager yeast (the SafLager 34-70 is going to be too fruity and spicey for that, in my opinion).
